Authentic Greek Potatoes

Authentic Greek Potatoes are a flavorful Mediterranean side dish featuring crispy, golden edges with soft, fluffy centers. Infused with fresh lemon juice, garlic, oregano, and quality olive oil, these potatoes deliver a perfect balance of zesty, savory, and herbaceous flavors. Easy to prepare using simple pantry staples, this recipe is ideal for pairing with grilled meats, fresh salads, or as part of a traditional Greek meal.

Ingredients

Scale

Potatoes

  • 2 lbs waxy or all-purpose potatoes (such as Yukon Gold), peeled and cut into 1 to 1.5 inch wedges

Marinade

  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 3 cloves garlic, crushed
  • 1 teaspoon dried oregano
  • Salt, to taste (about 1 teaspoon)
  • Freshly ground black pepper, to taste (about 1/2 teaspoon)

Cooking Liquid

  • Water or vegetable broth, enough to cover potatoes during parboiling

Instructions

  1. Prepare the potatoes: Peel the potatoes and cut them into wedges about 1 to 1.5 inches thick. Rinse them under cold water to remove excess starch, which helps achieve crispier edges.
  2. Parboil: Place the potato wedges in a pot and cover with water or vegetable broth. Bring to a boil and simmer for 8-10 minutes until just tender but not falling apart. Drain well.
  3. Mix the marinade: In a large bowl, whisk together the olive oil, fresh lemon juice, crushed garlic, dried oregano, salt, and pepper to create the marinade that will coat the potatoes.
  4. Toss and marinate: Add the drained potatoes to the marinade and toss gently to coat them evenly. Let the potatoes sit for 5-10 minutes to absorb the flavors.
  5. Roast: Preheat the oven to 400°F (200°C). Spread the marinated potatoes in a single layer on a baking sheet, making sure they are not overcrowded. Roast for 40-45 minutes, turning halfway through, until the potatoes are golden, crispy, and fragrant.
  6. Serve warm: Optionally drizzle with extra olive oil or a squeeze of fresh lemon juice just before serving. Serve the Authentic Greek Potatoes warm alongside your favorite main dishes.

Notes

  • Use waxy or all-purpose potatoes like Yukon Gold for best texture.
  • Parboiling is essential for tender insides and crispy exteriors.
  • High-quality extra virgin olive oil and fresh lemon juice elevate the flavor.
  • Spread potatoes evenly to avoid overcrowding and ensure even roasting.
  • Turn potatoes halfway through roasting for uniform crispiness.
  • Marinate potatoes briefly before roasting for deeper flavor infusion.
  • For variations, try swapping oregano with rosemary or thyme, adding crushed red pepper flakes, or using baby or sweet potatoes.
