Instructions

  1. Prep the Potatoes and Bacon: Dice the potatoes into small, uniform cubes and parboil for 5-7 minutes until just tender. Cook the bacon until crispy, then crumble or chop into bite-size pieces.
  2. Sauté Aromatics: In the same skillet used for the bacon, sauté diced onions and minced garlic until translucent and fragrant to build a flavorful base.
  3. Mix the Egg Base: Whisk together the eggs, milk, salt, and pepper in a large bowl until smooth and slightly frothy for a light, tender casserole.
  4. Combine All Ingredients: Add the cooked potatoes, bacon, sautéed onions and garlic, and shredded cheese into the egg mixture. Stir gently until evenly distributed.
  5. Bake the Casserole: Pour the mixture into a greased baking dish, spread evenly, and bake at 350°F (175°C) for 35-45 minutes until the eggs are set and the top is golden brown.
  6. Let It Rest: Allow the casserole to cool for 5-10 minutes before slicing and serving to enhance flavor melding and ease slicing.
