Instructions

  1. Prepare the Boudin Filling: Remove the casing from the boudin sausage, then break up and mix the filling evenly in a bowl to make shaping easier.
  2. Form the Balls: Scoop approximately two tablespoons of the boudin mixture and roll into smooth balls by hand. Repeat until all filling is used.
  3. Set Up Your Dredging Station: Place flour on one plate, beaten eggs in a shallow bowl, and breadcrumbs on another plate for efficient coating.
  4. Coat the Boudin Balls: Roll each ball first in flour, then dip into the beaten eggs, and finally coat thoroughly with breadcrumbs to ensure a crispy shell.
  5. Bake to Perfection: Arrange coated balls on a parchment-lined baking sheet or greased wire rack. Lightly spray or brush olive oil on top. Bake at 400°F (200°C) for 15-20 minutes, turning halfway, until golden and crispy.
