Baked Mississippi Chicken

Baked Mississippi Chicken

Baked Mississippi Chicken is a comforting and flavorful dish featuring tender chicken breasts baked in a rich, buttery, and slightly spicy gravy made with ranch seasoning, au jus gravy mix, butter, and pepperoncini peppers. Topped with melted cheddar cheese, this Southern-inspired recipe is simple to prepare, delivers perfectly moist chicken, and is perfect for a family dinner with versatile serving options.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Seasoning and Sauce

  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (1 oz) au jus gravy mix
  • 1/2 cup (1 stick) unsalted butter, cut into small pats
  • 1216 pepperoncini peppers (34 per chicken breast)

Topping

  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels to ensure seasoning adheres well. Lightly season both sides with salt and pepper.
  2. Arrange Ingredients in Baking Dish: Place the chicken breasts in a single layer in a greased baking dish. Sprinkle the ranch seasoning mix evenly over the top of each piece.
  3. Add Butter, Gravy Mix, and Pepperoncini: Distribute the small pats of butter evenly over the chicken breasts. Sprinkle the au jus gravy mix over everything, then place 3-4 pepperoncini peppers on top of each chicken breast for tang and mild heat.
  4. Bake Until Tender and Juicy: Bake the chicken uncovered at 350°F (175°C) for 30-40 minutes or until the internal temperature of the chicken reaches 165°F (74°C). During baking, the sauce will bubble and thicken.
  5. Add Cheese and Finish Baking: Remove the baking dish from the oven, sprinkle shredded cheddar cheese generously over the chicken, then return the dish to the oven for another 5-10 minutes until the cheese is melted and gooey.

Notes

  • Use fresh (not frozen) chicken breasts for best texture and flavor.
  • Don’t skip the pepperoncini peppers—their tangy flavor is key to this dish.
  • Let the chicken rest for 5 minutes after baking to lock in juices.
  • For more flavor, marinate the chicken for 30 minutes before baking.
  • To achieve a bubbly, golden crust on the cheese, broil it for 1-2 minutes after baking.
