Ingredients

Scale

Base Mixture

  • 8 oz cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Flavor & Texture

  • 1/3 cup freeze-dried strawberries, crushed into fine crumbs
  • 4 oz white chocolate chips, melted
  • Few drops of pink food coloring (optional)

Coating & Decoration

  • 6 oz white chocolate or strawberry candy melts, for coating
  • Crushed freeze-dried strawberries, edible glitter, or alternating chocolate drizzle (optional)

Instructions

  1. Prepare the Cream Cheese Mixture: Soften cream cheese to room temperature. In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy using an electric mixer or a sturdy spoon.
  2. Incorporate Freeze-Dried Strawberries and White Chocolate: Crush the freeze-dried strawberries into fine crumbs and gently fold them into the cream cheese mixture along with the melted white chocolate. Add a few drops of pink food coloring if desired. Mix gently but thoroughly to maintain creaminess.
  3. Chill the Mixture: Cover the bowl and refrigerate for at least one hour to firm up the mixture enough for rolling.
  4. Shape the Truffles: Using a spoon or mini cookie scoop, portion out small amounts and quickly roll between your hands into smooth, round balls. Place them on a parchment-lined baking sheet.
  5. Coat with Candy Melts: Melt white chocolate or strawberry candy melts according to package instructions. Dip each truffle into the melted coating, letting excess drip off. Place back on parchment and refrigerate until fully set.
  6. Add Finishing Touches: Optionally, drizzle contrasting chocolate over truffles or sprinkle with crushed freeze-dried strawberries or edible glitter before the coating sets. Chill again if needed.

Notes

  • Chill twice: refrigerate before shaping and after coating for best firmness and handling.
  • Use high-quality cream cheese and white chocolate for optimum flavor and texture.
  • Freeze-dried strawberries are essential to avoid excess moisture and maintain truffle consistency.
  • Work quickly when rolling to avoid mixture softening and sticking to hands.
  • Try different coatings like milk or dark chocolate for variety.
  • Store truffles in an airtight container in the refrigerator for up to five days.
  • Truffles can be frozen (coated or uncoated) for up to two months; thaw in refrigerator before serving.
