Ingredients

Scale

Main Ingredients

  • 8 oz high-quality bittersweet or semisweet chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/2 tsp blueberry extract or a few drops of blue food coloring

For Coating

  • Powdered sugar or cocoa powder (for dusting)
  • Optional: crushed freeze-dried blueberries, shredded coconut, crushed peppermint

Optional Spices

  • Pinch of cinnamon
  • Pinch of nutmeg
  • Pinch of cayenne or chili powder (for spice)

Instructions

  1. Heating the Cream and Butter: Gently heat the heavy cream and butter in a small saucepan over medium heat until it just begins to simmer. Avoid boiling to prevent scorching and ensure smooth melting of the chocolate.
  2. Melting the Chocolate: Place the chopped chocolate in a heatproof bowl. Pour the hot cream and butter mixture over it and let it sit for 2 to 3 minutes to soften the chocolate. Then, gently stir until the mixture is silky and fully combined, forming a smooth ganache.
  3. Adding Flavor and Color: Stir in vanilla extract and blueberry extract or blue food coloring. Mix thoroughly until the color and flavor are evenly incorporated. Add optional spices like cinnamon or nutmeg if desired.
  4. Chilling the Ganache: Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until firm enough to scoop and shape.
  5. Shaping the Truffles: Using a small cookie scoop or spoon, portion out the chilled ganache. Quickly roll each portion between your hands to form smooth balls. Keep your hands cool or wear food-safe gloves to prevent melting the ganache.
  6. Coating and Finishing Touches: Roll each truffle in powdered sugar, cocoa powder, or your chosen coating such as crushed freeze-dried blueberries or shredded coconut. Place the coated truffles on a parchment-lined tray and chill again briefly to set before serving or packaging.

Notes

  • Use high-quality chocolate and fresh cream for the best flavor and texture.
  • Keep hands cool or wear gloves while rolling truffles to avoid melting.
  • Use a cookie scoop to ensure consistent truffle size and neat presentation.
  • Avoid boiling the cream to maintain smooth ganache without scorching.
  • Allow the ganache to chill thoroughly for easier shaping.
  • Store truffles in an airtight container in the refrigerator for up to two weeks.
  • Freeze truffles in a single layer before transferring to a freezer-safe container for up to three months.
  • If softened too much, chill briefly in the refrigerator to firm up before serving.
