  • 1/4 cup almond flour
  • 1/3 cup granulated sugar
  • 1 tsp lemon zest

For Assembly and Topping

  • 1 egg (for egg wash, beaten)
  • 2 tbsp sliced almonds

Instructions

  1. Prepare the Dough: Combine cold, cubed butter with all-purpose flour in a food processor or mixing bowl. Pulse or cut until mixture resembles coarse crumbs. Gradually add ice water, mixing just until dough comes together. Chill dough for at least 30 minutes.
  2. Make the Filling: In a bowl, toss blueberries with sugar, almond flour, and lemon zest. The almond flour helps absorb excess juice and adds nutty flavor.
  3. Roll Out the Dough: Roll chilled dough on a floured surface into a rough 12-inch circle. Transfer to parchment-lined baking sheet, leaving about a 2-inch border around edges.
  4. Assemble the Galette: Spread blueberry filling evenly in center, leaving edges free. Fold dough edges up and over filling, pleating gently to create a rustic border.
  5. Add Toppings and Bake: Brush exposed crust with beaten egg wash for a glossy finish. Sprinkle sliced almonds on top. Bake at 375°F (190°C) for 40-45 minutes until crust is golden and filling is bubbling.
