For the Crust
- 1 1/4 cups all-purpose flour

- 1/3 cup granulated sugar

For Assembly and Topping

- 2 tbsp sliced almonds
- Prepare the Dough: Combine cold, cubed butter with all-purpose flour in a food processor or mixing bowl. Pulse or cut until mixture resembles coarse crumbs. Gradually add ice water, mixing just until dough comes together. Chill dough for at least 30 minutes.
- Make the Filling: In a bowl, toss blueberries with sugar, almond flour, and lemon zest. The almond flour helps absorb excess juice and adds nutty flavor.
- Roll Out the Dough: Roll chilled dough on a floured surface into a rough 12-inch circle. Transfer to parchment-lined baking sheet, leaving about a 2-inch border around edges.
- Assemble the Galette: Spread blueberry filling evenly in center, leaving edges free. Fold dough edges up and over filling, pleating gently to create a rustic border.
- Add Toppings and Bake: Brush exposed crust with beaten egg wash for a glossy finish. Sprinkle sliced almonds on top. Bake at 375°F (190°C) for 40-45 minutes until crust is golden and filling is bubbling.
