Ingredients

Scale

Vegetables

  • 4 cups fresh bok choy, chopped (separating stems and leafy greens)
  • 8 oz button or cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 inch fresh ginger, minced
  • 2 green onions, thinly sliced (for garnish)
  • Optional: chili flakes to taste

Oils & Sauces

  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce (or tamari for gluten-free)

Instructions

  1. Prepare Your Ingredients: Wash the bok choy thoroughly and chop it into bite-sized pieces, separating the stems from the leafy greens. Clean and slice mushrooms evenly. Mince garlic and ginger, and slice green onions thinly.
  2. Heat the Oils and Sauté Aromatics: In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and ginger, stirring for about 30 seconds until fragrant but not browned.
  3. Cook Mushrooms Until Tender: Add sliced mushrooms and cook for 4-5 minutes, stirring occasionally until golden and their natural juices release.
  4. Add Bok Choy Stems and Sauce: Toss in the bok choy stems, then pour in soy sauce and drizzle sesame oil, stirring to coat evenly.
  5. Stir in Bok Choy Leaves and Finish Cooking: Add leafy bok choy pieces and cook for 2-3 minutes until wilted but still vibrant. Adjust seasoning and sprinkle optional chili flakes if desired.
  6. Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve immediately for best taste and texture.

Notes

  • Prep all ingredients before starting to cook as stir-frying is quick.
  • Use high heat to seal in flavors and keep vegetables crisp.
  • Avoid overcrowding the pan; cook in batches if necessary.
  • Choose fresh bok choy with bright green leaves and firm white stems for optimal texture.
  • Adjust soy sauce gradually to prevent over-salting.
  • For gluten-free, substitute soy sauce with tamari or coconut aminos.
  • Add proteins like tofu, chicken, or shrimp for a more complete meal.
  • Include extra vegetables such as bell peppers, snap peas, or carrots if desired.
  • Top with toasted sesame seeds or cashews for added crunch.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freeze cooled leftovers in freezer-safe containers for up to 1 month.
  • Reheat gently with a splash of water on medium heat for best texture.
