Ingredients

Scale

Main Ingredients

  • 2 cups finely chopped cauliflower (rice-sized pieces)
  • 2 large eggs or equivalent vegan substitute (e.g., flax egg or chia egg)
  • 1/4 cup all-purpose flour or gluten-free flour (e.g., almond flour or gluten-free baking mix)
  • 1/4 cup grated Parmesan cheese or nutritional yeast
  • 2 tablespoons fresh herbs (parsley, chives, or choice)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Cooking oil (such as vegetable or olive oil) for pan-frying

Instructions

  1. Prepare the Cauliflower: Finely chop the cauliflower into small, rice-sized pieces using a food processor or knife to ensure the best texture for the fritters.
  2. Remove Excess Moisture: Place the chopped cauliflower in a clean kitchen towel and squeeze firmly to remove as much water as possible to prevent soggy fritters and help achieve a crispy finish.
  3. Mix the Batter: In a mixing bowl, combine the dried cauliflower with eggs or vegan substitute, flour, Parmesan cheese or nutritional yeast, fresh herbs, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are evenly incorporated.
  4. Heat the Pan: Heat a generous amount of cooking oil in a non-stick skillet over medium heat to reach the right temperature for a golden crust without burning.
  5. Fry the Fritters: Spoon the batter into the hot pan, flatten slightly with a spatula, and cook for 3-4 minutes per side until golden and crispy. Fry in batches without overcrowding the pan.
  6. Drain and Serve: Transfer cooked fritters to a paper towel-lined plate to absorb excess oil. Serve warm with your favorite dipping sauce or garnish.

Notes

  • Dry Is Key: Ensure cauliflower is well-drained to avoid soggy fritters.
  • Don’t Overcrowd: Fry in batches to maintain even cooking and crispiness.
  • Use a Non-Stick Skillet: Prevents sticking and allows easier flipping.
  • Customize Seasonings: Experiment with different herbs and spices to suit your taste.
  • Test the Heat: Medium heat is ideal; too high may burn fritters before inside cooks.
  • Baking Option: Can be baked at 400°F for 20-25 minutes, flipping halfway through, for a lighter version.
  • Storage: Refrigerate leftovers up to 3 days, freeze up to 1 month. Reheat in skillet or oven to retain crispiness.
