Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 cup shredded cheddar cheese (or preferred cheese blend)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce or 1 can (14.5 oz) diced tomatoes

Spices and Herbs

  • 1 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)

Liquids

  • 2 cups beef broth or water

Optional Vegetables

  • 1/2 cup peas
  • 1/2 cup bell peppers, diced
  • 1/2 cup mushrooms, sliced

Instructions

  1. Brown the Ground Beef: Heat a skillet over medium heat and cook the ground beef until fully browned with no pink remaining, breaking it up with a spoon as it cooks. Drain any excess fat to prevent the casserole from becoming greasy.
  2. Sauté Onion and Garlic: Add the finely chopped onion and minced garlic to the skillet with the beef, cooking until fragrant and translucent to build aromatic depth.
  3. Combine with Rice and Tomatoes: Stir in the uncooked rice and tomato sauce or diced tomatoes, mixing thoroughly so the rice begins to absorb the tomato juices.
  4. Season and Simmer: Season with salt, black pepper, paprika, and parsley if using. Pour in beef broth or water, bring the mixture to a boil, then reduce heat and simmer until the rice is tender and most of the liquid is absorbed.
  5. Transfer to Baking Dish and Add Cheese: Spread the beef and rice mixture evenly in a casserole dish. Generously sprinkle the shredded cheese over the top to create a creamy, gooey crust as it bakes.
  6. Bake Until Golden and Bubbling: Bake in a preheated oven at 350°F (175°C) for 20 to 25 minutes until the cheese is melted and slightly browned. Let the casserole rest briefly before serving for best texture.

Notes

  • Use medium to sharp cheddar cheese for the best melt and flavor.
  • Always drain excess grease from the cooked ground beef to avoid a soggy casserole.
  • Par-cooking rice can reduce baking time and improve texture.
  • Add cheese both inside the mixture and on top for extra gooeyness.
  • Allow the casserole to rest for 5 to 10 minutes after baking to set properly before serving.
