Ingredients

Scale

For the Meatloaf:

  • 1 lb lean ground beef
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup bread crumbs (or gluten-free alternative)
  • 1 large egg
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar or mozzarella cheese

For the Mashed Potatoes:

  • 2 lbs Yukon Gold or Russet potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/2 cup warm milk
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, chopped onions, minced garlic, bread crumbs, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix gently until just combined to keep the meatloaf tender.
  2. Add the Cheese Center: Shape half of the meat mixture into a loaf on a baking sheet. Evenly sprinkle shredded cheese over it, then cover with the remaining meat mixture, sealing the cheese completely inside.
  3. Bake the Meatloaf: Preheat the oven to 375°F (190°C). Place the meatloaf in the oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F and the top is nicely browned.
  4. Prepare the Mashed Potatoes: While the meatloaf bakes, boil peeled potatoes in salted water until tender, about 15-20 minutes. Drain well, then mash with butter, warm milk, salt, and pepper until creamy and smooth.
  5. Serve Hot: Let the meatloaf rest for 10 minutes before slicing to retain juices. Serve slices alongside a generous scoop of mashed potatoes and garnish with fresh parsley if desired.

Notes

  • Don’t overmix the meat to keep the meatloaf tender and juicy.
  • Seal the cheese well inside the meat mixture to prevent leaks.
  • Use a meat thermometer to test for doneness and avoid dryness.
  • Use warm milk for the mashed potatoes to keep them fluffy.
  • Let the meatloaf rest for 10 minutes before slicing to retain juices.
