Ingredients

Scale

Protein

  • 1 lb chicken breast, thinly sliced

Noodles

  • 8 oz stir fry noodles (egg noodles or choice), cooked al dente

Vegetables

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 2 green onions, thinly sliced (for garnish)

Sauce

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 2 tbsp water (or as needed to thin sauce)

Oils

  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Instructions

  1. Prepare Your Ingredients: Slice the chicken thinly, chop all vegetables into bite-sized pieces, and cook the noodles according to package instructions until just tender. Drain and set aside.
  2. Make the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sugar, and water to create a savory sauce that will infuse the dish with balanced flavor.
  3. Cook the Chicken: Heat vegetable oil in a large pan or wok over medium-high heat. Add the sliced chicken and stir fry until golden and cooked through, about 4-5 minutes. Remove the chicken from the pan and set aside.
  4. Stir Fry the Vegetables: In the same pan, add a little more oil if needed. Toss in the minced garlic, ginger, and all the vegetables. Stir fry until they are crisp-tender while maintaining bright colors and a slight crunch.
  5. Combine and Toss: Return the cooked chicken to the pan, add the cooked noodles, pour in the prepared sauce, and toss everything together over heat until noodles are evenly coated and heated through.

Notes

  • Prep all ingredients ahead of time for a smooth cooking process.
  • Use high heat and a wok or large pan to achieve an authentic stir fry sear.
  • Avoid overcrowding the pan by cooking in batches if necessary to prevent steaming.
  • Undercook noodles slightly as they will finish cooking when tossed with the sauce.
  • Fresh garlic and ginger significantly enhance the flavor.
  • For garnishing, sprinkle freshly chopped green onions and toasted sesame seeds on top.
  • Leftovers can be stored in an airtight container refrigerated up to 3 days.
  • Reheat gently in a pan with a splash of water or broth to maintain moisture.
