Ingredients

Scale

Chicken

  • 2 large boneless, skinless chicken breasts, thinly sliced

Vegetables & Aromatics

  • 8 oz fresh cremini or white button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Sauce & Thickening

  • 2 tbsp all-purpose flour (or gluten-free flour blend/cornstarch for GF)
  • 1 cup chicken broth
  • 1/2 cup sour cream (or Greek yogurt/coconut or cashew cream for dairy-free)

Fat & Seasonings

  • 1 tbsp butter
  • 1 tbsp cooking oil (vegetable or olive oil)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp paprika (smoked or regular)

Instructions

  1. Prepare Your Ingredients: Slice the chicken breasts into thin strips. Clean and slice the mushrooms. Finely chop the onion and mince the garlic to have all ingredients ready for a smooth cooking process.
  2. Cook the Chicken: Heat oil in a skillet over medium-high heat. Add the chicken strips and cook until browned on all sides but not fully cooked through. Remove the chicken from the pan and set aside to keep moist.
  3. Sauté the Vegetables: In the same pan, add butter and then the chopped onions and garlic. Sauté until the onions are translucent and fragrant. Add the sliced mushrooms and cook until they release their juices and begin to brown, forming a savory base.
  4. Make the Gravy: Sprinkle flour over the mushrooms and stir well for about one minute to eliminate the raw flour taste. Gradually pour in the chicken broth while stirring to create a smooth sauce. Cook it until the gravy thickens, then reduce the heat before stirring in the sour cream gently to keep the sauce creamy.
  5. Combine Chicken and Finish: Return the cooked chicken strips to the pan and simmer gently in the creamy mushroom gravy until the chicken is cooked through and well coated. Season with salt, pepper, and paprika to taste before serving.

Notes

  • Use room temperature chicken to ensure even cooking and tenderness.
  • Don’t overcrowd the pan to allow proper browning instead of steaming.
  • Always prefer fresh mushrooms over canned for better flavor and texture.
  • Add sour cream off the heat or on low heat to prevent curdling.
  • Season gradually and taste multiple times to achieve balanced flavors.
