Instructions

  1. Prepare Your Ingredients: Spiralize the zucchini into noodles and chop the chicken into bite-sized pieces. Mince the garlic and halve the cherry tomatoes to get everything ready before cooking.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces, seasoning with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
  3. Sauté the Garlic and Tomatoes: In the same pan, add a little more olive oil if needed and sauté the minced garlic for about 30 seconds until fragrant. Toss in the cherry tomatoes and cook for 3-4 minutes until they soften and release their juices.
  4. Add Zucchini Noodles: Return the chicken to the pan and add zucchini noodles. Toss everything together and cook for 2-3 minutes until the zucchini softens slightly but remains tender-crisp.
  5. Finish with Lemon and Basil: Remove the pan from heat. Squeeze fresh lemon juice over the pasta, sprinkle with chopped basil, and toss again. Add freshly grated Parmesan cheese on top before serving for a creamy, umami finish.
