  • 2 tablespoons lemon juice

Instructions

  2. Marinate the Chicken: Place the chicken thighs in a bowl or zip-top bag and pour half of the chimichurri sauce over them. Let them marinate for at least 10 minutes to absorb the fresh flavors. For deeper flavor, marinate up to a few hours in the fridge.
  3. Cook the Chicken Thighs: Heat a skillet or grill pan over medium-high heat. Place the chicken thighs skin side down first and cook without moving for 6 to 7 minutes to develop crisp skin. Flip and cook for another 6 to 7 minutes until fully cooked through, reaching an internal temperature of 165°F (74°C).
  4. Finish and Serve: Remove the chicken and let it rest for a few minutes. Drizzle the remaining chimichurri sauce on top or serve it on the side for an extra burst of fresh herb flavor.
