Pastry Base
- 1 sheet puff pastry or shortcrust pastry (enough to line a quiche or tart pan)
Filling
- 3 large eggs
- 200 ml cream or milk
- 150 g cooked chicken or turkey, diced
- 1–2 tsp curry powder (adjust to taste)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 50 g dried apricots, finely chopped or 1 tbsp mango chutney
- 2 tbsp fresh herbs (cilantro or parsley), chopped
- 50 g grated cheese (optional)
- Prepare the Pastry Base: Roll out your pastry dough and line a quiche or tart pan, trimming the edges neatly. Prick the base with a fork and blind bake at 180°C (350°F) for 10 minutes to create a crisp foundation.
- Cook the Filling Ingredients: Sauté chopped onions and garlic in a pan until soft and fragrant. Add diced cooked chicken and curry powder, stirring until the mixture is evenly coated and heated through.
- Mix the Custard: In a bowl, whisk together eggs and cream or milk until smooth. Fold in finely chopped dried apricots or a spoonful of mango chutney and the fresh herbs.
- Assemble the Quiche: Spread the chicken and onion mixture evenly over the partly baked crust. Pour the custard mixture on top and sprinkle with grated cheese if using.
- Bake to Perfection: Place the quiche in a preheated oven at 180°C (350°F) for 30-35 minutes, or until the filling is set and the top is golden brown.
