Ingredients

Scale

Onions

  • Mini onions (small, tender, about 12-15 pieces)

Coating

  • 1 cup all-purpose flour (or gluten-free flour alternative for gluten-free option)
  • 1 cup panko breadcrumbs (or gluten-free breadcrumbs alternative)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Soaking

  • 2 cups buttermilk (or plant-based milk with 1 tbsp lemon juice as vegan alternative)

Frying

  • Vegetable oil (enough for deep frying, about 4 cups)

Instructions

  1. Prepare the Mini Onions: Peel the mini onions carefully to maintain their shape and uniform size, which helps achieve the beautiful bloom effect after frying.
  2. Soak in Buttermilk: Submerge the peeled onions in buttermilk for at least 30 minutes to soften their sharpness and improve batter adhesion.
  3. Mix the Coating: Combine all-purpose flour, panko breadcrumbs, paprika, garlic powder, salt, and black pepper in a large bowl to create a flavorful, crispy coating mixture.
  4. Coat the Onions: Remove onions from the buttermilk, letting excess drip off. Dredge each onion in the flour mixture. For extra crispiness, dip them again in buttermilk and re-coat with the flour mixture.
  5. Fry to Perfection: Heat vegetable oil to 350°F (175°C). Fry the coated onions in batches for 3-4 minutes until deeply golden and crunchy. Drain on paper towels or a wire rack and allow to cool slightly before serving.

Notes

  • Use firm, fresh mini onions to maintain shape during frying.
  • Double coating (dipping twice in buttermilk and flour mix) ensures extra crunch and flavor.
  • Maintain oil temperature at 350°F for optimal crispness and to avoid sogginess or burning.
  • Drain fried onions on a wire rack over paper towels to keep them crispy.
  • Coat onions ahead of time and refrigerate for up to 1 hour to let flavors meld before frying.
