Rice Base
- 2 cups short-grain sushi rice
- 3 tablespoons sushi vinegar (rice vinegar, sugar, salt mixture)
Spicy Salmon Mixture
- 8 oz sashimi-grade fresh salmon fillet, diced
- 3 tablespoons mayonnaise
- 1–2 tablespoons sriracha sauce (adjust to taste)
- 1 teaspoon soy sauce
Additional Ingredients
- 2–3 scallions, thinly sliced
- 4 nori sheets (optional, for layering or serving)
- 1 cup shredded mozzarella cheese or Japanese mayo-based cheese blend
- Optional garnish: toasted sesame seeds
- Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions. While the rice is still warm, gently fold in sushi vinegar to season the rice. Set aside and allow it to cool slightly.
- Make the Spicy Salmon Mixture: In a mixing bowl, combine the diced fresh salmon with mayonnaise, sriracha sauce, and soy sauce. Mix thoroughly until every piece of salmon is evenly coated with the creamy, spicy sauce.
- Assemble the Bake: Evenly spread the seasoned sushi rice into a shallow baking dish. If using nori sheets, layer them over the rice before adding the spicy salmon mixture on top.
- Add Cheese and Bake: Generously sprinkle shredded cheese over the salmon layer. Preheat your oven to 375°F (190°C) and bake the dish for 15-20 minutes, or until the cheese has melted and turned golden brown.
- Garnish and Serve: Remove the bake from the oven and let it rest for a few minutes. Garnish with chopped scallions and optional toasted sesame seeds. Serve warm and enjoy!
Notes
- Choose sashimi-grade salmon for the freshest flavor and safety.
- Gently fold in sushi vinegar to keep rice grains fluffy and intact.
- Adjust sriracha amount gradually to control spice level.
- Use a shallow baking dish for even cooking and proper cheese browning.
- Let the bake rest after coming out of the oven for easier serving.
