Ingredients
Scale
Rice Base
- 2 cups short-grain sushi rice
- 3 tablespoons rice vinegar
Seafood Topping
- 8 ounces imitation crab or cooked seafood of choice, shredded or chopped
- 1/2 cup mayonnaise
- 1 tablespoon soy sauce or tamari (gluten-free option)
- 1 teaspoon sriracha or spicy mayo (optional)
Fresh Vegetables & Garnishes
- 1/2 cup cucumber, diced
- 1/2 cup avocado, diced
- 1/4 cup green onions, chopped
- 1 tablespoon nori sheets crumbled or seaweed flakes
- Sesame seeds (black or white), for garnish
Optional Add-ins and Variations
- Additional shredded mozzarella or cream cheese for extra cheesiness
- Substitutes: chopped tuna, cooked shrimp, smoked salmon, tofu, mushrooms, tempeh, or vegan mayo
Instructions
- Prepare the sushi rice: Rinse sushi rice several times until water runs clear. Cook according to package instructions. While still warm, gently mix in the rice vinegar to season the rice. Set aside to cool slightly.
- Mix the seafood topping: In a bowl, combine shredded imitation crab or chosen seafood with mayonnaise, soy sauce, and sriracha if using. Stir well until fully incorporated and creamy.
- Layer the bake: Grease a baking dish and evenly spread the prepared sushi rice on the bottom. Sprinkle chopped green onions, diced cucumber, and avocado over the rice. Carefully layer the seafood mixture on top, spreading evenly. Finish by sprinkling crumbled nori or seaweed flakes over the surface.
- Bake to perfection: Preheat oven to 375°F (190°C). Place the baking dish uncovered in the oven and bake for 15 to 20 minutes or until the top turns lightly golden and bubbly. Remove from oven and let rest for a few minutes to set.
- Serve and enjoy: Scoop portions onto plates or crispy seaweed sheets to make hand rolls. Garnish with additional green onions and sesame seeds as desired.
Notes
- Use short-grain sushi rice and avoid overcooking to ensure sticky texture ideal for layering.
- Drain any excess liquid from seafood to prevent sogginess in the bake.
- Adjust sriracha amount according to preferred spice level.
- Pre-toast nori or seaweed flakes briefly for extra crunch and flavor if desired.
- Allow the bake to rest after baking to help layers hold together when serving.
