Ingredients

Scale

Primary Ingredients

  • 200g spaghetti or your favorite pasta
  • 45 fresh garlic cloves, thinly sliced
  • 1/4 cup extra virgin olive oil
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley

Optional Ingredients

  • Grated Parmesan cheese, to taste
  • Grilled chicken, shrimp, or crispy bacon (for added protein)
  • Sautéed mushrooms, spinach, or cherry tomatoes (for vegetables)
  • Chili oil or fresh chopped chili peppers (for extra spice)
  • Plant-based cheese alternative (for vegan option)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook your pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
  2. Sauté the Garlic: In a large skillet, heat the extra virgin olive oil over medium-low heat. Add thinly sliced garlic and cook slowly for 2-3 minutes until fragrant and golden, taking care not to burn it.
  3. Combine Pasta and Sauce: Add the drained pasta to the skillet with the garlic oil. Toss to coat evenly, adding reserved pasta water a little at a time to loosen the sauce and help it cling to the pasta.
  4. Add Finishing Touches: Season with salt, freshly cracked black pepper, and red pepper flakes if using. Sprinkle chopped fresh parsley on top and add grated Parmesan cheese if desired. Toss gently to combine.

Notes

  • Use fresh garlic for the best flavor and aroma.
  • Sauté garlic slowly over medium-low heat to avoid burning and bitterness.
  • Reserve pasta water to create a silky, cohesive sauce.
  • Toss pasta constantly with the sauce for even flavor absorption.
  • Fresh parsley adds brightness and color to the dish.
