Ingredients

Scale

Main Ingredients

  • 200g high-quality dark chocolate, finely chopped
  • 120ml heavy cream
  • 2 tablespoons molasses
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Optional Coatings

  • Cocoa powder
  • Powdered sugar
  • Crushed nuts (pecans or walnuts)
  • Edible glitter

Optional Variations

  • Finely chopped pecans or walnuts for crunch
  • Splash of bourbon or rum for spiked truffles
  • Coconut cream and dairy-free chocolate for a vegan version
  • Melted white chocolate for coating
  • Fresh orange zest

Instructions

  1. Step 1: Melt the Chocolate and Heat the Cream
Chop the dark chocolate finely and place it in a heatproof bowl. Warm the heavy cream over medium heat until it starts to simmer, but do not boil. Pour the hot cream over the chocolate and let it sit for 1-2 minutes to soften.
  2. Step 2: Stir in Molasses and Spices
Gently stir the chocolate and cream together until the mixture is smooth and glossy. Add molasses, ground ginger, cinnamon, nutmeg, and vanilla extract. Mix well to fully infuse the flavors.
  3. Step 3: Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until firm enough to handle for rolling.
  4. Step 4: Shape the Truffles
Use a small cookie scoop or spoon to portion out the chilled mixture. Quickly roll each portion between your palms to form smooth balls. If the mixture softens too much, chill again briefly before continuing.
  5. Step 5: Coat and Finish
Roll each truffle in your choice of cocoa powder, powdered sugar, crushed nuts, or edible glitter for a festive finish. Place them on parchment paper and refrigerate for an additional hour to set.

Notes

  • Choose quality dark chocolate for the best flavor and texture.
  • Do not skip the chilling step to ensure the mixture firms up sufficiently.
  • Keep your hands cool or chill the mixture as needed to make rolling easier.
  • Experiment with different coatings for varied textures and appearances.
  • Use fresh ground spices to get the most aromatic and flavorful truffles.
