Ingredients

Scale

Protein

  • 4 chicken breasts

Dairy

  • 1 cup crumbled feta cheese

Vegetables & Fruits

  • 1 pint cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tablespoons fresh lemon juice

Pantry & Herbs

  • 1/2 cup Kalamata olives, pitted
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Preheat your oven to 400°F (200°C). Rinse and pat dry the chicken breasts, then season them generously with salt, pepper, and dried oregano. Slice the red onion thinly, halve the cherry tomatoes, mince the garlic, and crumble the feta cheese.
  2. Arrange the Chicken and Veggies: In a medium baking dish, spread out the chicken breasts evenly. Scatter the cherry tomatoes, sliced onions, minced garlic, and Kalamata olives all around and on top of the chicken. Drizzle a generous amount of olive oil and freshly squeezed lemon juice over everything for bright flavor and moisture.
  3. Bake to Perfection: Place the dish in the oven and bake for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the tomatoes are softened and blistered. Halfway through baking, add the crumbled feta cheese over the chicken and veggies to melt slightly and get that creamy finish.
  4. Finish and Serve: Once baked, remove the dish from the oven and let it rest for a few minutes. Garnish with a sprinkle of fresh parsley or oregano, then serve your delicious Greek Chicken Bake warm with your favorite side dishes.

Notes

  • Let the chicken sit at room temperature for 15 minutes before baking for even cooking.
  • Do not overcrowd the pan; spread ingredients out to allow roasting instead of steaming.
  • Use authentic Greek feta cheese for best creamy and tangy flavor.
  • Always use fresh lemon juice rather than bottled for a brighter taste.
  • Allow the bake to rest after cooking to lock in the juices and maintain tenderness.
