Ingredients

Scale

Protein

  • 46 chicken thighs or breasts (bone-in for more flavor, boneless for quicker cooking)

Vegetables

  • 34 medium Yukon Gold or red potatoes, cut into chunks
  • 46 garlic cloves, peeled

Marinade & Seasonings

  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • Salt, to taste (about 1 1/2 teaspoons)
  • Black pepper, to taste (about 1 teaspoon)

Other

  • 1/2 cup chicken broth or water

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together fresh lemon juice, lemon zest, olive oil, minced or crushed garlic, dried oregano, thyme, salt, and black pepper until well combined. This mixture will infuse the chicken and potatoes with bright, savory flavors.
  2. Marinate Chicken and Potatoes: Add chicken pieces and potato chunks to the bowl with marinade. Toss to coat each piece thoroughly. Let the mixture sit for at least 30 minutes at room temperature or refrigerate for up to 2 hours for deeper flavor.
  3. Arrange Ingredients for Roasting: Preheat your oven to 400°F (200°C). Spread the marinated chicken and potatoes evenly on a baking tray or roasting pan in a single layer. Pour the chicken broth or water around the edges to maintain moisture during cooking.
  4. Roast Until Golden and Tender: Place the tray in the oven and roast for 40-50 minutes. Halfway through cooking, baste the chicken and potatoes with pan juices to keep them moist and enhance flavor. Roast until the chicken is cooked through and the potatoes are tender and golden.
  5. Final Broil for Crispy Skin: Switch your oven to broil and cook for an additional 3-5 minutes, watching carefully to crisp the chicken skin and caramelize the potatoes without burning.

Notes

  • Use room temperature chicken for even roasting.
  • Don’t skip marinating; it’s key for flavor depth.
  • Cut potatoes uniformly for even cooking.
  • Baste often to keep everything juicy and crisp.
  • Reserve marinade to heat and use as a sauce drizzle after cooking.
