Instructions

  1. Prepare the Marinade: In a mixing bowl, combine fresh lemon juice, olive oil, minced garlic, chopped oregano, thyme, salt, black pepper, and red pepper flakes if using. Whisk thoroughly to blend all flavors.
  2. Marinate the Chicken: Place chicken thighs in a zip-top bag or shallow dish. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 30 minutes up to 2 hours, or overnight for deeper flavor.
  3. Preheat the Oven: Set the oven to 425°F (220°C) to prepare for roasting the chicken.
