Ingredients

Scale

Main Ingredients

  • 3 ripe bananas (very ripe with brown spots)
  • 1/2 cup Greek yogurt
  • 1 3/4 cups all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 large egg (or flax egg for vegan version)
  • 1 teaspoon vanilla extract

Optional Mix-ins

  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup chocolate chips (dark chocolate recommended)
  • 1/3 cup dried fruit (optional)

Instructions

  1. Prepare the Bananas and Wet Ingredients: Mash the ripe bananas in a large mixing bowl until mostly smooth with a few lumps remaining. Add Greek yogurt, sugar, egg, and vanilla extract, stirring until fully combined to form the wet base of the bread.
  2. Mix Dry Ingredients Separately: In another bowl, whisk together the all-purpose or gluten-free flour, baking soda, and salt to evenly distribute the leavening agents.
  3. Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture with a spatula, mixing just until incorporated to avoid over-mixing and ensure tenderness.
  4. Add Optional Mix-ins: Gently fold in any chosen nuts, chocolate chips, or dried fruit to add texture and bursts of flavor.
  5. Bake to Perfection: Pour batter into a greased or parchment-lined loaf pan. Bake in a preheated oven at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use very ripe bananas for maximum sweetness and moisture.
  • Do not over-mix the batter to keep the bread tender and avoid toughness.
  • Use room temperature eggs and yogurt for smoother blending.
  • Check your oven temperature with a thermometer to ensure even baking.
  • Allow the bread to cool properly to prevent cracking and maintain texture.
