  • 3 cloves garlic, finely chopped

  • 3/4 cup chicken broth

Instructions

  1. Prep the ingredients: Peel and dice the sweet potatoes into bite-sized pieces, halve and trim the Brussels sprouts, slice the apple, and finely chop the onion and garlic. Pat the chicken dry to ensure a good sear later.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown on both sides but not fully cooked through. Remove chicken and set aside to keep juices sealed in.
  3. Cook the vegetables: In the same skillet, melt butter and sauté the onions and garlic until fragrant and translucent. Add sweet potatoes and Brussels sprouts, stirring occasionally until they begin to soften and brown.
  4. Add apples and herbs: Stir in sliced apples along with fresh sage, thyme, and rosemary. Let the aromas mingle and apples soften slightly to enhance the autumn flavors.
  5. Finish cooking with broth: Return the chicken to the skillet, season with salt and pepper, then pour in the chicken broth. Cover and simmer on low heat for 10-12 minutes, until the chicken is fully cooked and vegetables are tender.
  6. Rest and serve: Remove the skillet from heat and let it rest for a couple of minutes to allow the flavors to settle and intensify before serving.
