  • 1 large onion, chopped
  • 1 (28 oz) can crushed tomatoes
  • 1 cup red wine
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 ½ cups beef broth
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare and Sear the Beef: Generously season the beef chuck roast on all sides with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until deeply browned, about 4-5 minutes per side, to lock in juices and develop rich flavor.
  2. Sauté Aromatics: Remove the roast temporarily from the pot. Add chopped onions and minced garlic to the Dutch oven. Cook over medium heat until softened and fragrant, about 5 minutes, scraping up any browned bits from the bottom to incorporate their flavor.
  3. Deglaze with Wine: Pour in the red wine, stirring to loosen all the caramelized bits stuck to the pot. Allow it to simmer for 3 to 5 minutes to reduce slightly and mellow the wine’s sharpness.
  4. Add Tomatoes, Herbs, and Broth: Stir in crushed tomatoes, fresh rosemary, thyme, and beef broth. Nestle the seared roast back into the pot so the liquid reaches about halfway up the meat.
  5. Slow Cook Until Tender: Cover the Dutch oven with a lid and transfer to a preheated oven at 325°F (160°C). Cook slowly for 3 to 4 hours, until the beef is hand-pulled tender and the sauce has thickened beautifully.
