  • 3 cloves garlic, minced

  • 4 soft crusty sub rolls
  • 2 tbsp olive oil, divided

Instructions

  1. Prepare the Sausage: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Remove the casing from the Italian sausage and crumble it into the pan. Cook, stirring and breaking apart the sausage, until browned and no longer pink inside.
  2. Sauté the Peppers and Onions: Remove the cooked sausage from the skillet and set aside. Add the remaining olive oil if needed, then add sliced bell peppers and onions to the same pan. Sauté for 8-10 minutes until softened and slightly caramelized. Add the minced garlic during the last few minutes to prevent burning and enhance flavor.
  3. Combine Sausage and Peppers: Return the sausage to the skillet with the peppers and onions. Stir to combine, then season with salt, pepper, and Italian seasoning if using. Cook an additional 2-3 minutes to blend flavors.
  4. Assemble the Subs: Slice each sub roll lengthwise without cutting all the way through to create a pocket. Generously fill each roll with the sausage and pepper mixture. Top with slices of provolone or mozzarella cheese.
  5. Melt the Cheese: Place the assembled subs on a baking sheet and broil in a preheated oven for 2-3 minutes until the cheese is melted and bubbling. Watch closely to prevent burning.
  6. Serve and Enjoy: Remove the subs from the oven, let cool slightly, and serve warm. Optionally, garnish with fresh basil, grated Parmesan, or a drizzle of balsamic glaze for extra flavor.
