Instructions

  1. Boil and Prep Potatoes: Wash the potatoes and cut them into bite-sized chunks. Boil in salted water for 12-15 minutes, until just tender but firm enough to hold their shape. Drain and let cool slightly.
  2. Cook the Bacon: While potatoes cool, cook bacon pieces in a skillet over medium heat until crispy. Drain on paper towels, then crumble into small bits. Optionally reserve some bacon grease for a smoky drizzle.
  3. Prepare the Dressing: In a mixing bowl, combine softened cream cheese and mayonnaise until smooth. Stir in garlic powder, lemon juice or vinegar, salt, and black pepper. Adjust seasoning to taste for a creamy and tangy balance.
  4. Mix Ingredients Together: Once potatoes have cooled, gently toss them with the dressing, diced jalapenos, crumbled bacon, shredded cheddar cheese, and chopped green onions. Mix carefully to evenly distribute ingredients without breaking the potatoes.
