Instructions

  1. Prepare the Jalapeño Mixture: Finely chop the fresh jalapeños, removing seeds if you prefer less heat. In a bowl, mix the chopped jalapeños with softened cream cheese and shredded sharp cheddar until well combined, creating a spicy and creamy filling.
  2. Assemble Your Sandwich: Butter one side of each bread slice generously. On the unbuttered side of two slices, evenly spread the jalapeño and cheese mixture. If using, place cooked bacon slices on top of the filling. Top with the remaining bread slices, butter-side facing out.
  3. Cook Until Golden and Melty: Heat a skillet over medium heat. Place the assembled sandwich in the skillet and press gently with a spatula. Cook until the bottom side is golden brown, then carefully flip and cook the other side until golden and the cheese filling is melted, about 3–4 minutes per side.
