Instructions

  1. Prepare the Filling: Brown the ground meat in a skillet over medium heat. Add the chopped onions, minced garlic, cumin, chili powder, and paprika. Cook until the meat is fully cooked and aromatic. Stir in the refried beans and 1/2 cup of enchilada sauce to create a rich, flavorful filling.
  2. Assemble the Casserole Layers: Preheat your oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish to prevent sticking. Place tortillas over the sauce to form the first layer. Spread an even layer of the meat and bean mixture over the tortillas, then sprinkle a generous amount of shredded cheese. Repeat the layering process, finishing with a thick layer of cheese on top.
  3. Bake to Perfection: Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and continue baking for another 10-15 minutes, or until the cheese is melted, bubbly, and golden on the edges.
  4. Garnish and Serve: Allow the casserole to rest for a few minutes after baking to set. Garnish with fresh cilantro, sliced green onions, and optionally a dollop of sour cream or guacamole. Slice and serve warm.
