Ingredients

Scale

Chicken and Meat

  • 1.5 pounds boneless chicken thighs or breasts

Citrus and Herbs

  • Juice and zest of 1 large lemon
  • 2 tablespoons fresh parsley, chopped (or oregano)

Vegetables and Add-ins

  • 1 cup marinated artichoke hearts, chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 3 garlic cloves, minced

Oils and Liquids

  • 2 tablespoons olive oil
  • 1/4 cup chicken broth or water

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Pat the chicken dry and season generously with salt, pepper, and a little lemon zest to ensure a flavorful crust develops during cooking.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place the chicken pieces skin-side down if using thighs. Cook until golden brown and crisp, about 4-5 minutes per side. Remove from pan and set aside to rest.
  3. Sauté Garlic and Add Artichokes: Reduce heat to medium. In the same skillet, add the minced garlic and sauté about 30 seconds until fragrant. Stir in marinated artichoke hearts and Kalamata olives, warming them through and incorporating the pan’s flavors.
  4. Build the Sauce: Pour fresh lemon juice into the skillet, scraping the pan to release browned bits. Add chicken broth or water to create a light sauce base. Season with salt, pepper, and fresh herbs like parsley or oregano.
  5. Simmer and Finish: Return the chicken to the pan, spooning sauce over each piece. Cover and simmer for 8-10 minutes until chicken is cooked through and flavors meld beautifully.

Notes

  • Pat the chicken dry to achieve a crispy sear and better texture.
  • Use fresh lemons for brighter, cleaner citrus flavor compared to bottled juice.
  • Don’t rush searing; allow chicken to brown properly for a flavorful crust.
  • Choose good quality Kalamata olives for the best taste impact.
  • Add fresh herbs last to maintain their vibrant flavor and aroma.
