Ingredients

Pasta and Meatballs

  • Elbow macaroni – 2 cups (uncooked)
  • Mini meatballs (homemade or store-bought) – 1 lb

Cheese Sauce

  • Butter – 3 tablespoons
  • All-purpose flour – 3 tablespoons (or gluten-free flour for gluten-free option)
  • Milk or cream – 2 1/2 cups
  • Sharp cheddar cheese, shredded – 2 cups
  • Parmesan cheese, grated – 1/2 cup
  • Garlic powder – 1/2 teaspoon
  • Onion powder – 1/2 teaspoon
  • Salt – 1 teaspoon (adjust to taste)
  • Black pepper – 1/2 teaspoon (adjust to taste)

Optional Garnishes and Add-ins

  • Fresh parsley, chopped – 2 tablespoons
  • Red pepper flakes or smoked paprika (for spice) – to taste
  • Additional cheeses (mozzarella, Gruyere, smoked gouda) – optional, as desired
  • Vegetables (spinach, roasted red peppers, peas) – optional, finely chopped

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook elbow macaroni according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Prepare the meatballs: If using store-bought mini meatballs, warm them through in a skillet over medium heat until heated thoroughly. For homemade, prepare and cook your preferred mini meatball recipe until golden brown and fully cooked.
  3. Make the cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux. Gradually whisk in milk or cream, stirring constantly until the mixture thickens. Lower the heat, then add shredded sharp cheddar cheese and Parmesan, stirring until completely melted and the sauce is smooth. Season with garlic powder, onion powder, salt, and pepper.
  4. Combine pasta, meatballs, and sauce: Gently mix the cooked pasta and warmed mini meatballs into the cheese sauce, coating everything evenly. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  5. Serve warm: Transfer the mac and cheese to serving bowls or dish. Garnish with fresh chopped parsley or other herbs if desired, and enjoy immediately while warm and comforting.

Notes

  • Use sharp cheddar cheese for the best melt and flavor.
  • Do not overcook the pasta; slightly undercook for better texture after mixing.
  • Reserve some pasta water to adjust sauce consistency as needed.
  • Customize the spice by adding smoked paprika, cayenne, or red pepper flakes.
  • Fresh herbs like parsley or basil add brightness and color when sprinkled just before serving.
