Mississippi Pot Roast

This easy Mississippi Pot Roast recipe delivers tender, juicy beef infused with rich flavors from ranch seasoning, au jus gravy mix, butter, and pepperoncini peppers. Slow-cooked to perfection, it melts in your mouth and pairs beautifully with a variety of sides for a comforting, crowd-pleasing meal.

Ingredients

Main Ingredients

  • Chuck Roast (3-4 lbs)
  • Ranch Seasoning Packet (1 packet)
  • Au Jus Gravy Mix Packet (1 packet)
  • Unsalted Butter (1/2 cup or 1 stick)
  • Pepperoncini Peppers (6-8 whole peppers)
  • Beef Broth or Water (1 cup)

Instructions

  1. Prep Your Roast: Pat the chuck roast dry with paper towels to help the seasonings stick better, ensuring a flavorful crust and tender interior once cooked.
  2. Layer Ingredients in the Slow Cooker: Place the roast in the slow cooker. Sprinkle ranch seasoning and au jus gravy mix evenly over the meat. Add butter in pats on top of the roast, scatter pepperoncini peppers around the beef, and pour beef broth or water into the cooker to keep the roast moist.
  3. Cook Low and Slow: Set the slow cooker to low and cook for 8 to 10 hours, allowing the connective tissues to break down and the beef to become tender and flavorful.
  4. Shred and Serve: When fork-tender, remove the roast and shred the meat, discarding excess fat. Return shredded beef to the sauce; mix gently so every bite is rich with Mississippi Pot Roast flavor.

Notes

  • Trim excess fat from the roast to avoid greasiness while keeping some for flavor.
  • Don’t skip the butter as it adds essential richness and a silky texture.
  • Use fresh pepperoncini for best flavor or add some pepperoncini juice for extra tang.
  • Reserve the cooking liquid as a flavorful sauce or gravy for serving.
  • Check doneness starting at 7 hours if your slow cooker runs hot to avoid overcooking.
