Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

Filling

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1 cup sour cream or Greek yogurt
  • 2 teaspoons vanilla extract
  • 1 1/2 cups fresh strawberries, chopped

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs, melted butter, and a pinch of sugar in a bowl. Press the mixture firmly into the bottom of a springform pan. Bake at 350°F (175°C) for 8-10 minutes until golden and set. Let cool completely before adding the filling.
  2. Make the Cheesecake Filling: Beat softened cream cheese with granulated sugar until smooth and creamy. Add eggs one at a time, fully incorporating each before adding the next. Stir in vanilla extract and sour cream for a rich, smooth texture.
  3. Fold in Strawberries: Gently fold the chopped fresh strawberries into the cheesecake batter to evenly distribute their sweetness throughout the filling.
  4. Bake the Cheesecake: Pour the filling over the cooled crust and smooth the top. Bake at 325°F (160°C) for 50-60 minutes. The edges should be set and slightly puffed while the center remains a bit jiggly.
  5. Cool and Chill: Allow the cheesecake to cool to room temperature, then chill in the refrigerator for at least 4 hours or overnight to develop a creamy texture and meld the flavors.

Notes

  • Use room temperature cream cheese and eggs for a smooth, lump-free batter.
  • Mix just enough to combine to avoid overmixing and cracking.
  • Consider baking the cheesecake in a water bath by wrapping the pan in foil to keep it moist and prevent cracks.
  • Fresh strawberries provide the best flavor and color; if using frozen, drain excess liquid.
  • Chill the cheesecake overnight for the best texture and easier slicing.
  • Store leftovers covered in the fridge for up to 4-5 days or freeze for up to 2 months.
