Overnight Sausage Breakfast Casserole

Overnight Sausage Breakfast Casserole is a comforting and hearty make-ahead dish combining savory sausage, creamy eggs, and hearty bread soaked overnight for a custard-like texture. Perfect for busy mornings or feeding a crowd, this casserole offers effortless preparation, family-friendly flavors, and easy customization to suit any taste or dietary need.

Ingredients

Scale

Sausage and Meat

  • 1 pound breakfast sausage (pork or turkey)

Bread and Vegetables

  • 6 cups day-old bread cubes (sturdy bread preferred)
  • 1/2 cup diced onions (optional)
  • 1/2 cup diced bell peppers (optional)

Egg Mixture

  • 8 large eggs
  • 2 cups milk or cream
  • Salt, to taste
  • Black pepper, to taste

Cheese

  • 1 1/2 cups shredded sharp cheddar or mozzarella cheese

Instructions

  1. Cook and Brown the Sausage: Heat a skillet over medium heat and cook the breakfast sausage until nicely browned and cooked through, breaking it into crumbles as it cooks. Drain any excess grease and set aside.
  2. Prepare the Bread and Veggies: Cube the day-old bread into bite-sized pieces. If using, sauté the diced onions and bell peppers in a pan until soft and fragrant. Combine the sautéed veggies with the bread cubes for added flavor and texture.
  3. Mix the Custard: In a large mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until fully combined to create a custard mixture that will soak the bread and bind all ingredients together during baking.
  4. Assemble the Casserole: Grease a baking dish, then evenly layer the bread cubes and veggies in the dish. Sprinkle the cooked sausage evenly over the bread, then add the shredded cheese on top. Slowly pour the egg mixture over the entire casserole, pressing lightly to ensure all ingredients are coated.
  5. Refrigerate Overnight: Cover the assembled casserole with plastic wrap and refrigerate overnight. This soaking step allows the bread to absorb the custard, creating a rich and creamy texture.
  6. Bake the Next Morning: Preheat the oven to 350°F (175°C). Remove the plastic wrap and bake the casserole for 45 to 50 minutes until golden brown and puffed. Insert a knife in the center to ensure it comes out clean. Allow to cool a few minutes before serving.

Notes

  • Use sturdy, day-old bread to prevent a soggy casserole.
  • Brown the sausage thoroughly to deepen flavor and reduce greasiness.
  • Overnight soaking is essential for melding flavors and achieving perfect texture.
  • Let the casserole rest before slicing to keep it intact and easier to serve.
  • Mix different types of cheese for a richer flavor profile.
