Ingredients

Scale

Fruit Filling

  • 4 cups fresh ripe peaches, peeled and sliced
  • 2 cups fresh blackberries
  • 3/4 cup granulated sugar
  • 1 tablespoon all-purpose flour (or gluten-free flour blend)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon

Cobbler Topping

  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 6 tablespoons cold unsalted butter, cut into small pieces (or plant-based butter for vegan)
  • 1/2 cup milk (or plant-based milk such as almond or oat milk)

Instructions

  1. Prepare the Fruit Filling: Peel and slice the fresh peaches. In a large bowl, toss the peaches with blackberries, granulated sugar, lemon juice, a pinch of cinnamon, and flour. The sugar helps draw out the juices, while the flour thickens the filling as it bakes.
  2. Make the Cobbler Topping: In a separate bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut the cold butter into the dry ingredients using a pastry cutter or fingers until the mixture resembles coarse crumbs. Stir in the milk to form a soft batter.
  3. Assemble the Cobbler: Butter a baking dish and pour in the fruit filling evenly. Dollop spoonfuls of the batter on top, leaving gaps to allow steam to escape and juices to bubble through.
  4. Bake Until Golden: Preheat the oven to 375°F (190°C) and bake for 40 to 45 minutes until the topping is golden brown and the fruit is bubbly and fragrant.
  5. Cool Slightly and Serve: Let the cobbler cool for 10 to 15 minutes so the filling sets for easier serving. Serve warm with vanilla ice cream or whipped cream for extra indulgence.

Notes

  • Use ripe peaches and blackberries for the best natural flavor and juiciness.
  • Mix the cobbler batter just until combined to keep the topping tender and flaky.
  • Chill the butter before cutting it into the dry ingredients to create a flakier crust.
  • Monitor baking time closely near the end to prevent burning while ensuring the fruit cooks through.
  • Allow the cobbler to rest before serving so the filling thickens and flavors blend beautifully.
