Instructions

  1. Prepare the Steak and Vegetables: Thinly slice the ribeye or sirloin steak into bite-sized strips. Heat a pan over medium-high heat and quickly sauté the steak for about 2 minutes per side until just browned. Remove and set aside. In the same pan, add sliced bell peppers and onions, cooking slowly until tender and caramelized, enhancing their sweetness.
  2. Mix the Meatloaf Base: In a large bowl, combine ground beef, breadcrumbs (or almond flour), egg, Worcestershire sauce, garlic powder, black pepper, and salt. Gently mix by hand until just combined to avoid compacting the meat, which ensures a tender meatloaf.
  3. Assemble the Meatloaf: Fold the sautéed vegetables and cooked steak pieces into the meat mixture evenly. Press half of this mixture into a loaf shape on a parchment-lined baking sheet or loaf pan. Layer a generous amount of provolone cheese on top, then cover with the remaining meat mixture, sealing and shaping it neatly.
  4. Bake Until Perfect: Preheat your oven to 350°F (175°C). Bake the meatloaf for 50 to 60 minutes, or until the internal temperature reaches 160°F (71°C). In the last 10 minutes, add a few extra provolone slices on top for a melty, golden finish.
