Instructions

  1. Prepare the Beets: Start by washing the beets thoroughly to remove any dirt. Boil them in water until tender but still firm, about 30-40 minutes depending on size. Once cooked, drain and let them cool before peeling and slicing into your preferred thickness.
  2. Make the Pickling Brine: Combine white vinegar, water, sugar, and salt in a saucepan. Heat gently while stirring until the sugar and salt dissolve completely. For added flavor, toss in your choice of optional spices and let simmer for a few minutes to infuse.
  3. Pack the Jars: Place the sliced beets into sterilized jars, distributing the optional spices evenly. Carefully pour the hot brine over the beets until they are fully covered. Leave a little headspace at the top, then seal the jars tightly.
  4. Cool and Store: Allow the jars to cool to room temperature before refrigerating. The pickled beets will develop full flavor after at least 24 hours and can be enjoyed for up to 2-3 weeks when kept chilled.
