Ingredients

Scale

Protein

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized chunks

Fruit & Vegetables

  • 2 cups fresh pineapple chunks
  • 1 large bell pepper (any color), cut into bite-sized pieces
  • 1 medium red onion, cut into bite-sized pieces

Marinade

  • ¼ cup soy sauce (use tamari for gluten-free option)
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • Optional spices: 1 tsp smoked paprika, ¼ tsp cayenne pepper, fresh cilantro to taste

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together soy sauce, honey, minced garlic, lime juice, olive oil, and your choice of spices to create a flavorful base that tenderizes the chicken.
  2. Chop Ingredients: Cut chicken into uniform chunks for even cooking. Similarly, chop pineapple, bell pepper, and red onion into bite-sized pieces to fit neatly on the skewers.
  3. Marinate the Chicken: Place chicken pieces into the marinade and refrigerate for at least 30 minutes, up to 4 hours, allowing the flavors to fully penetrate the meat.
  4. Assemble the Kabobs: Thread the chicken, pineapple, bell pepper, and red onion alternately onto skewers, leaving small gaps between pieces to promote even grilling.
  5. Grill to Perfection: Preheat your grill to medium-high heat. Grill the kabobs for 10-12 minutes, turning occasionally until the chicken is cooked through and has slight charring on the edges.
  6. Serve and Enjoy: Remove kabobs from the grill and let them rest for a few minutes to lock in juices before serving hot with your preferred sides.

Notes

  • Cut all ingredients into similar sizes for even cooking.
  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Leave gaps between pieces on the skewers to allow better heat circulation.
  • Use a meat thermometer to ensure chicken reaches 165°F internal temperature.
  • Allow kabobs to rest after grilling to keep them juicy.
