Ingredients

Scale

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 cup pure pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Prep the Dry Ingredients: Whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, cloves, and salt in a medium bowl until well combined. Set aside for easy mixing later without overworking the dough.
  2. Cream the Butter and Sugars: In a large bowl, beat the softened unsalted butter with the brown sugar and granulated sugar until the mixture is fluffy and pale, building the cookie’s sweetness and texture base.
  3. Add Wet Ingredients: Beat in the egg, pumpkin puree, and vanilla extract until the mixture is smooth and well combined, forming a moist and flavorful dough.
  4. Combine Wet and Dry Mixtures: Gradually fold the dry ingredient mixture into the pumpkin mixture using a spatula, mixing just until combined to maintain a light and tender texture.
  5. Shape and Bake the Cookies: Drop rounded spoonfuls of dough onto parchment-lined baking sheets, spacing them to allow gentle spreading. Bake in a preheated oven at 350°F (175°C) for 12–15 minutes until the edges are golden but the centers remain soft.
  6. Cool and Enjoy: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to set perfectly while staying soft and chewy.

Notes

  • Use room temperature butter and egg for easier mixing and better cookie texture.
  • Mix dry ingredients with wet only until combined to avoid dense cookies.
  • Freshly ground spices provide the most vibrant pumpkin spice flavor.
  • Chill dough for 30 minutes if your kitchen is warm to prevent excessive spreading and firmer cookies.
  • Use parchment paper or silicone mats to avoid sticking and ensure even baking.
