Ingredients

Scale

Soup Base

  • 2 tablespoons red curry paste
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tablespoon fish sauce or soy sauce, to taste
  • 1 tablespoon lime juice

Aromatics

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Dumplings

  • 1216 dumplings (store-bought or homemade; chicken, pork, vegetable, or tofu-filled)

Fresh Vegetables

  • 1 cup bell peppers, sliced
  • 2 cups spinach, bok choy, or a mix

Fresh Herbs and Garnishes

  • ½ cup fresh cilantro leaves
  • ½ cup fresh Thai basil leaves
  • Optional: chopped green onions, fresh red chili slices

Instructions

  1. Prepare the Aromatics: Heat 1 tablespoon of oil in a pot over medium heat. Add the minced garlic and ginger and sauté gently until fragrant, about 1-2 minutes, releasing their warm, inviting aroma.
  2. Build the Broth: Stir in the red curry paste and cook with the aromatics for 1 minute to release its flavors. Then pour in the chicken or vegetable broth and coconut milk. Bring the mixture to a gentle simmer.
  3. Cook the Dumplings: Gently add the dumplings to the simmering broth. Cook according to the package instructions or until they float and are tender, typically about 5-8 minutes, allowing them to soak up the curry flavors.
  4. Add Vegetables and Seasonings: Add the sliced bell peppers and spinach or bok choy to the pot. Stir in fish sauce or soy sauce to taste. Let the soup simmer for a few more minutes until the vegetables are just tender but still vibrant.
  5. Finish with Freshness: Remove the pot from heat and stir in a splash of lime juice. Add fresh cilantro and Thai basil leaves to brighten the soup with fresh herbaceous notes.

Notes

  • Use fresh red curry paste for the best aroma and flavor.
  • Do not overcook dumplings to maintain their perfect texture.
  • Adjust the amount of coconut milk and curry paste to balance spiciness and creaminess to your preference.
  • Chop vegetables ahead of time to speed up the cooking process.
  • Try homemade dumplings filled with chicken, pork, or vegetables for an elevated taste.
  • Store dumplings separately when refrigerating leftovers to preserve texture.
  • For a vegan version, use vegetable broth, tofu or vegetable dumplings, and substitute fish sauce with soy sauce or tamari.
