Instructions

  1. Prepare the Cake Base: Start with a freshly baked or store-bought red velvet cake. Crumble it finely into a large bowl, breaking down any larger chunks to ensure an even mixture.
  2. Mix in Cream Cheese and Butter: Add softened cream cheese, butter, and vanilla extract to the cake crumbs. Stir gently but thoroughly until you achieve a uniform, pliable dough-like consistency suitable for rolling.
  3. Shape the Truffles: Pinch off small amounts of the mixture and roll between your palms to form smooth, even balls about one inch in diameter. Place them on a parchment-lined tray and chill for at least 30 minutes to firm up.
  4. Melt the White Chocolate Coating: While the truffles chill, melt white chocolate or candy melts in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth and lump-free.
  5. Dip and Decorate: Using a fork or dipping tool, carefully dunk each chilled truffle into the melted chocolate, ensuring full coating. Allow excess chocolate to drip off before placing the truffle back on parchment paper. Quickly add sprinkles or decorations before the coating sets.
  6. Set and Serve: Let the coated truffles rest at room temperature or refrigerate until the chocolate shell hardens. Enjoy immediately or store for later.
