Ingredients

Vegetables

  • Fresh asparagus: 1 bunch (about 12-15 tender stalks), trimmed and cut into 1-inch pieces
  • Roasted red peppers: 1 cup, sliced into thin strips

Cheeses

  • Ricotta cheese: 3/4 cup
  • Parmesan cheese: 1/4 cup, freshly grated

Herbs and Seasoning

  • Fresh garlic: 1 clove, minced
  • Fresh thyme or basil: 1 teaspoon, finely chopped
  • Salt: 1/2 teaspoon, or to taste
  • Black pepper: 1/4 teaspoon, freshly ground

Pastry and Oils

  • Puff pastry sheets: 1 sheet (about 8×8 inches), thawed if frozen
  • Olive oil: 1 tablespoon, for drizzling

Instructions

  1. Prepare the Vegetables: Trim the asparagus stalks and cut them into small pieces about one inch long. Drain and slice your roasted red peppers into thin strips to evenly distribute in each tart.
  2. Roll Out and Cut Puff Pastry: Roll your puff pastry sheets on a lightly floured surface to smooth out seams, then cut into small squares or circles depending on your preferred tart shape. Place them in a mini muffin tin or on a baking sheet lined with parchment paper.
  3. Assemble the Tarts: Spread a spoonful of ricotta cheese onto each pastry base. Add chopped asparagus and strips of roasted red pepper. Sprinkle minced garlic and chopped herbs on top, then drizzle with olive oil. Season with salt and freshly ground black pepper to taste.
  4. Add the Finishing Touch: Sprinkle freshly grated Parmesan cheese over each tart to create a golden, savory crust once baked.
  5. Bake Until Golden: Bake the tarts in a preheated oven at 375°F (190°C) for 15-20 minutes or until the pastry is puffed and golden brown and the cheese is melted and bubbly.

Notes

  • Use fresh asparagus for the best crunch and vibrant color.
  • Do not overfill the pastry to prevent sogginess and maintain tart shape.
  • Keep puff pastry chilled until ready to bake for maximum flakiness and rise.
  • Slice ingredients evenly for consistent cooking and a polished presentation.
  • Customize herbs by substituting thyme, rosemary, or basil according to your preference.
