Mushroom Gravy

  • 2 tablespoons butter
  • 1 cup mushrooms, sliced
  • 1/2 cup onion, chopped
  • 2 tablespoons all-purpose flour (or gluten-free flour)
  • 2 cups beef broth

Instructions

  1. Prepare the beef patties: In a large bowl, combine ground beef, finely chopped onion, breadcrumbs soaked in milk, Worcestershire sauce, minced garlic, salt, and pepper. Mix gently but thoroughly, then form the mixture into oval-shaped patties about 1/2 inch thick.
  2. Brown the patties: Heat a large skillet over medium-high heat and add a little oil or butter. Cook the patties in batches for about 4-5 minutes per side until beautifully browned but not fully cooked through. Remove from skillet and set aside.
  3. Sauté mushrooms and onions: Using the same skillet, melt butter and add sliced mushrooms and chopped onions. Cook until soft and caramelized, about 6-8 minutes, which builds the foundation for the gravy’s deep flavor.
  4. Make the mushroom gravy: Sprinkle flour over the mushrooms and onions, stirring constantly to form a roux and eliminate raw flour taste. Slowly whisk in beef broth, scraping up any browned bits from the pan until the gravy thickens smoothly.
  5. Simmer patties in gravy: Return the browned patties to the skillet, nestling them into the mushroom gravy. Lower heat to a gentle simmer, cover, and cook for 15-20 minutes until patties are cooked through and gravy is luscious and flavorful.
