Shrimp and Steak Fried Rice

This Shrimp and Steak Fried Rice recipe is a quick, protein-packed, and flavorful dish combining tender steak, juicy shrimp, fluffy rice, and fresh vegetables. Perfect for weeknight dinners, it offers bold flavors from soy and oyster sauces with the convenience of one-pan cooking.

Ingredients

Scale

Proteins

  • 8 oz sirloin or flank steak, thinly sliced against the grain
  • 8 oz medium shrimp, peeled and deveined
  • 2 large eggs, lightly scrambled

Produce

  • 1/2 cup diced carrots
  • 1/2 cup peas (fresh or frozen)
  • 3 green onions, sliced (plus extra for garnish)
  • 2 cloves garlic, freshly minced
  • 1 tablespoon fresh ginger, minced

Staples and Sauces

  • 4 cups cooked day-old rice
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil (for finishing)

Instructions

  1. Prepare Ingredients: Slice the steak thinly against the grain to ensure tenderness. Peel and devein the shrimp if not already done. Dice carrots, slice green onions, and mince garlic and ginger so everything is ready for quick cooking.
  2. Cook Steak and Shrimp: Heat vegetable oil in a large skillet or wok over medium-high heat. Quickly sear the steak strips until browned but still juicy, about 2-3 minutes, then remove and set aside. In the same pan, cook shrimp just until pink and opaque, about 2 minutes, then remove as well.
  3. Sauté Vegetables and Aromatics: Add a little more vegetable oil if needed, then toss in garlic, ginger, diced carrots, and peas. Stir-fry for 2-3 minutes until fragrant and slightly tender.
  4. Add Rice and Eggs: Push vegetables to one side of the pan and scramble the eggs on the other side until just cooked. Once done, mix eggs with the vegetables, then add cold day-old rice, breaking up any clumps with your spatula as you stir.
  5. Combine and Season: Return the cooked steak and shrimp to the pan. Add soy sauce, oyster sauce, and a drizzle of sesame oil. Toss everything together thoroughly, ensuring the flavors meld and the rice is heated through.

Notes

  • Use day-old rice to prevent sogginess and achieve the best fried rice texture.
  • Have all ingredients prepped and ready before cooking to ensure fast stir-fry and prevent overcooking.
  • Cook on high heat quickly to keep ingredients crisp and flavorful.
  • Thinly slicing steak ensures quick cooking and tender bites.
  • Add sauces gradually, tasting and adjusting to avoid overpowering the dish.
