Ideal for busy evenings, this recipe delivers rich, melt-in-your-mouth meat and balanced nutrition, perfect for family dinners with minimal hands-on time.

Ingredients

Scale

Main Ingredients

  • 1 (3 to 4-pound) Corned Beef Brisket
  • 4 cups Beef Broth or Water
  • 4 Carrots, peeled and chopped
  • 4 medium Potatoes, peeled and chopped
  • 1 small Head of Cabbage, chopped
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Pickling Spices (mustard seeds, coriander, peppercorns, etc.)

Instructions

  1. Prepare the Ingredients: Rinse the corned beef brisket under cool water to remove excess salt from the curing process. Chop the carrots, potatoes, onions, and cabbage into uniform pieces for even cooking.
  2. Layer in the Slow Cooker: Place the chopped carrots, potatoes, and onions at the bottom of the slow cooker. Lay the brisket on top with the fat side up to keep it juicy as it cooks. Sprinkle the pickling spices evenly over the meat and vegetables for authentic flavor.
  3. Add Liquid and Cook: Pour beef broth or water into the slow cooker, covering the ingredients about halfway to ensure moisture without making the dish soupy. Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours until the meat is tender and flavors meld.
  4. Add Cabbage: About 1 hour before the end of cooking, add the chopped cabbage to the slow cooker to keep it tender-crisp with fresh color and texture.
  5. Rest and Serve: Once cooking is complete, let the corned beef rest for a few minutes before slicing against the grain. Serve with the cooked vegetables and spoon some of the flavorful broth over the plate for added moisture.

Notes

  • Rinse the brisket to reduce excess salt for balanced seasoning.
  • Place the fat cap of the brisket facing upwards to baste the meat as it cooks.
  • Slow cook on low heat for best tenderness.
  • Allow the meat to rest before slicing to retain juices.
  • Add cabbage near the end of cooking to preserve its texture and color.
  • Use a meat thermometer and aim for an internal temperature around 190°F for perfectly cooked brisket.
