Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp active dry yeast (one packet)
  • 1 cup warm milk
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 tbsp butter, melted

Onion Filling

  • 2 medium onions, finely chopped or caramelized
  • 1 tbsp butter (for sautéing)

Cheese Blend

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Onion Filling: Finely chop the onions and sauté them slowly in 1 tbsp of butter over low heat until golden and caramelized to enhance their natural sweetness and deepen the flavor.
  2. Make the Dough: In a large bowl, mix the warm milk, yeast, and sugar. Let it sit for about 5 minutes until foamy. Add the flour, salt, melted butter, and cooled caramelized onions. Combine to form a soft dough and knead until smooth and elastic.
  3. First Rise: Cover the dough with a clean towel and let it rise in a warm place for 1 to 1.5 hours or until doubled in size. This step helps achieve a fluffy and soft texture.
  4. Shape and Add Cheese: Punch down the risen dough gently, roll it out on a floured surface, and sprinkle the mozzarella and cheddar evenly over the surface. Roll the dough into a log or fold as desired, then place it into a loaf pan or shape it for baking.
  5. Final Rise and Bake: Allow the shaped dough to rise again for 30 to 45 minutes. Preheat the oven to 375°F (190°C) and bake the bread for 25 to 30 minutes until the crust is golden and the cheese is melted and bubbling.

Notes

  • Use fresh yeast or properly stored dry yeast for the best rise and soft texture.
  • Sauté onions on low heat slowly to bring out sweetness without burning.
  • Do not over knead the dough – knead just until smooth to avoid tough bread.
  • Use room temperature ingredients to help yeast activate properly.
  • Cover the dough while rising to prevent drying out and ensure an even rise.
