Instructions

  1. Prepare the Spinach: Wash and finely chop fresh spinach leaves. Ensure any excess water is drained well to avoid a runny batter.
  2. Mix the Batter: In a mixing bowl, combine gram flour, yogurt, chopped green chilies, grated ginger, toasted cumin seeds, turmeric, salt, and black pepper. Stir in the chopped spinach until you get a cohesive, spoonable batter. Add a little water if needed to adjust the consistency.
  3. Heat the Pan: Warm a non-stick or cast-iron skillet over medium heat. Lightly grease with oil or ghee to prevent sticking and to add flavor.
  4. Cook the Puda: Pour a ladle of the batter onto the hot pan, spreading it slightly to make a thick pancake. Cook for 2-3 minutes or until the edges look cooked and golden. Then flip carefully and cook the other side until crisp and golden brown.
  5. Serve Hot: Transfer your spinach puda to a plate and serve immediately for the best texture and flavor.
