Ingredients

Scale

Filling

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup fresh strawberries, diced small

Assembly & Frying

  • 1012 eggroll wrappers
  • Butter or oil for frying (about 1-2 cups depending on pan size)
  • Water, for sealing eggroll wrappers

Optional Garnishes

  • Powdered sugar, for dusting
  • Chocolate sauce or strawberry glaze, for drizzling

Instructions

  1. Prepare the Cheesecake Filling: In a medium bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth and creamy. Gently fold in diced fresh strawberries, ensuring pieces are small enough to remain inside the wrappers without breaking them.
  2. Assemble the Eggrolls: Lay an eggroll wrapper flat on a clean surface with one corner facing you. Spoon about two tablespoons of the cheesecake-strawberry mixture near the corner. Fold the corner over the filling, then fold in the sides and roll tightly to seal. Moisten the edges with a bit of water to help them stick securely.
  3. Fry the Eggrolls: Heat butter or oil in a deep skillet over medium heat until shimmering. Carefully place the eggrolls seam-side down and fry until golden brown and crisp on all sides, about 2-3 minutes per side. Remove and drain on paper towels to absorb excess oil.
  4. Serve and Garnish: Lightly dust with powdered sugar or drizzle with chocolate or strawberry sauce for an extra special touch. Serve warm for the best creamy and crunchy experience.

Notes

  • Wrap Tightly: Roll eggrolls snugly and seal edges properly to prevent filling leakage.
  • Use Fresh Strawberries: Fresh berries provide the best flavor and juiciness; avoid frozen as they can make the filling watery.
  • Oil Temperature: Maintain medium heat to ensure golden crispiness without burning the wrappers.
  • Chill Filling: Keep the cream cheese mixture chilled before assembling to make handling easier and prevent melting.
  • Drain Well: Allow fried eggrolls to rest on paper towels to keep them crisp and less oily.
